The Gyuto is the Japanese name for a western style Chefs knife. It is intended as an all purpose kitchen knife to be used for meats, fish as well as processing vegetables- slicing and dicing. The blade is thinner than the traditional wester style chef's knives, but it is generally used the same way.

Mosaic blades go through ZWILLING'S proprietary FRIODUR® four step ice-hardening process which maximizes the properties of the steel
1: Heating to 1800 degrees F to harden the steel
2: Quenching- quickly cool down to room tempature
3: Freeze to -94 degrees F to enhance corrosion resistance
4: Double tempering to just below -480 degrees F to improve the steels toughness
Morimoto 600S blades have 57 degree ROCKWELL hardness which provides excellent cutting edge retention and ultimate corrosion resistance
Hand finished edge with traditional 3-step Honbazuke sharpening process. Each blade is honed by an artisan to 9.5-12 degrees per side, providing exceptional sharpness
