The contour on the bottom of the handle ensures an excellent grip whether held by the handle or in a pinch grip.

The Shun Premier Paring Knife is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX "super steel" to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.

Nice paring knife
I use this knife for many small cutting jobs around the kitchen - tomatoes, broccoli, salamis. The blade stays sharp as long as I hone it. I like the look - the irrregular finish of the blade and the wood handle. Only thing I do not like, and it is minor, is the blade finish is too shiny. But that does not effect performance.

Great Slicer
I use this knife for small slicing applications, not for detailed paring work. In a paring knife, I want a narrow blade section, to allow for constant redirection of cut angles. This knife's section is too deep for such cutting, but it's ideal for slicing small stuff. The hammered surface does seem to cut down on friction/adhesion, which is nice. The edge is extremely sharp and (thus far) has held quite well. The handle is comfortable and versatile, and the balance is terrific. On a purely aesthetic note, this knife is absolutely beautiful!
