Simpler the better!
This is one of the simplest and most elegant kitchen tools in existence, used for peeling vegetables in every restaurant in France for generations. Unfortunately you can't find it or anything equivalent in stores because the gadget manufacturers and retailers are pushing expensive alternatives that are difficult to master and don't work as well. Using the "Econome" French-made peeler I can peel 10 lbs. of potatoes in half the time it would take using the unwieldy Cuisinart or Oxo versions. It takes a few hours to master the skill; holding the potato or carrot in the palm of one hand, take the instrument in the other hand, place the blade on the edge furthest away and pull toward you, peel in strips and turn the potato. Do it like a French chef and amaze your family and friends!

Love It!
I am extremely happy with the product and with the First the product. It is super sharp and the aperture is sufficiently wide that peels do not get stuck while peeling. We have not had to sharpen it yet, but am hopeful it will hold its edge. The only disappointment is the finish on the wood handle which is not smooth (has a dried drip). has been a wonderful company to deal with. Originally I ordered a slightly smaller version of this peeler which was back ordered. When the KnifeCenter was not able to obtain the ordered product within the specified time, they telephoned me and offered to substitute a slightly more expensive product (the one reviewed). I received the peeler 2 days later. In short, excellent product and wonderful customer service. Doesn't get any better than that!

Very good
With american peelers, the only thing you really do is peeling your fingers. With L'Econome, you do peel vegetables.
