Opinal knives are cheap, handy and have a very sharp edge out of the box.I've had a few Opinal's before, but always the carbon-steel variety. These have a very good edge, but do stain easily and I find tend to taint food with a metallic taste. I bought a set of the stainless steel ones to see what they are like, even though I find that stainless steel blades usually don't hold their edge that well and don't always resharpen very well. But considering the price - only about $11 per knife - when one is blunt it's almost not worth resharpening it.I'll keep one in the car, one in the backpack, one in the toolbox, one in the first aid kit, one in the office, and just about anywhere else where I might need a knife. As for the rest, they make great small gifts for friends and family.I highly recommend these cheap but handy knives.
