great knife for the price
since i have purchased this knife, i have been putting it through the test. I have been using it constantly on chicken, ribs and hams, and i have yet to sharpen it. A friend who is a retired butcher turned me on to these knives. This is the second one i get from this line, and i will be replacing all of my old kitchen knives now. The blades really hold an edge. I have had the 10 inch butcher knife for over a year now and have been using it regularly and have yet to sharpen it on a stone. i just run it over the steel before using and it is ready to go. i had spend 3 times the price of these on Wusthofs and Henckels in the past, and i had to constantly sharpen them. i recommend you get one and put it up against your current knives....then go back and replace the entire set. one last note, if you will be using these to cut through a lot of cold fish or chicken invest in some cut resistant gloves, keep your fingers safe!!
